Palms can have software installed to handle Word and Excel. There is also software to use them as wireless modems (check your plan before you do this, because data transfer limits can be vicious).
As for the iPod Touch, they should play fairly well together, Apple gets most of their stuff right. (Disclaimer: I don't own one. I'm applying experience with other devices.)
